Whole Plant Based Snicker Bars

I got this recipe from a German friend and slightly changed the amounts of ingredients needed to get
5the Snicker-like bars I wanted for my granddaughter as alternative snack to the unhealthier store-bought stuff. To all the diabetics out there: This is not something you should eat every day. Half of a bar when your sweet tooth is aching, is enough, and if you could exercise afterwards, it would be even better. Diabetes 2 is a silent killer and can be prevented. Take care of your health!
Recipe:
Soak 200 gr of pitted cut up dates in boilling water for about 5 minutes.
Pour water out and pour dates in food processor. Add 3 tbsp peanut butter (preferably non gmo and 100% natural) and a pinch of salt. Now mix until you get a nougat like mass. Keep 60% of the mass in the food processor and 40% in a separate bowl. Now pour 40 gramm of oat flour to the 60% in the food processor and mix thoroughly. If neccessary, knead with your hands and then on a piece of parchment, form a rectangle. On the rectangle spread the 40% mass with a knife. Then add peanuts of your choice (salted, unsalted, whole or chopped). I used chopped peanuts because Addy has braces and a hard time eating whole peanuts, After you covered the whole rectangle with plenty of nuts, put it it in the freezer for 30 minutes.
After you take it out of the freezer, put it upside down on parchment paper. Don’t worry if some of the nuts fall off, we can put them on again later. In the microwave melt 150 gre vegan chocolate morsels ( I had rice milk morsels). While melting, make sure you are not burning them. It usually takes 1.5 minutes to melt them. Check after 1 minute and stir with a wooden spoon, then put them in again, melt, and stir again. I recommend to then put the bowl with the melted chocolate into a bigger bowl filled with hot water so that the chocolate stays fluid until you have covered your bars. Now cover then under side of your rectangle with chocolate. Then put a parchment paper on top and turn them again. Put the peanuts back on the top if they have fallen off. Cut the rectangle in 3 or 4 bars. Now drizzle the chocolate on all the bars until they are completely covered. Put them in the refrigerator for 15 minutes. Then take them out and enjoy.
