WHAT I EAT IN A DAY as a Naturopathic Medical Student- easy fall recipes- Plant based

Hi guys!

As the weather starts to cool down, I have been craving some more warming cozy melas. I love incorporating seasonal foods and warming spices into my diet this time of year.

Here are some healthy meal ideas that are great for meal prep!


Tofu nuggets:
½ block firm tofu
1 carrot, shredded
1 small onion chopped
2 cloves of garlic
1/3 cup parsley
¼ teaspoon smoked paprika
¼ teaspoon salt
Black pepper
1 teaspoon mustard
2 tablespoon Nutritional yeast
Juice of ½ lemon
¼ cup cooked quinoa
2 tablespoons almond flour

1. Add all ingredients to a blender, blend until combined
2. Scoop into nuggets
3. Place on lined baking tray
4. Bake at 350 degrees for 20 minutes
5. Flip, and bake for another 20 minutes


½ small butter nut squash
2 carrots
1 small onion
1-2 stalks of celery
1 tablespoon grated ginger
2-3 cloves of garlic
¼ teaspoon smoked paprika
¼ teaspoon cumin
2 bay leaves
½ cup red lentils, rinsed
¼ cup cashews, soaked over night
2 cups water/ vegetable broth
Salt and Pepper to taste

1. Sautee onions, celery, garlic, ginger, and spices.
2. In a pot combine lentils, squash, carrots, bay leaves, sautéed vegetables, and water/ broth.
3. Bring to a boil and let simmer for 30 minutes.
4. Remove the bay leaves, add the cashews.
5. Transfer to a blender, blend until smooth.
6. Transfer back to a pot to keep warm.
7. Add salt and pepper to taste.
