⭕ RECIPES:
1️⃣ Acorn Squash:
1 acorn squash, (halved and insides removed)
combine: 2 tbs brown sugar, 1/2 tsp ground cinnamon, 1/8 tsp salt
Add 1 tablespoon of butter and half of the mixture to each half of the squash, rub all over the flesh of the squash. Air fryer at 370 for 20-25 minutes or until squash reaches desired tenderness.

2️⃣ Fall Brussels Sprouts
1 pound brussels sprouts (trimmed and halved)
2 tablespoons olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon red pepper flakes (or omit if you don’t like spicy)
1 cup sliced apple (i used honey crisp.)
1/2 cup dried cranberries
1/4 cup chopped pecans
1/4 cup red wine vinaigrette** (homemade or store-bought)
Prepare Brussels sprouts by trimming and cutting in half, lengthwise. Wash and place in a bowl, mix with oil and seasoning until well coated.
Place in air fryer basket and cook at 350˚F for 10 minutes, stirring once halfway through cooking.
Add apples, dried cranberries and pecans/walnuts and air fry for an additional 2-5 minutes.
Transfer to a serving platter and drizzle with red wine vinaigrette. Serve immediately.

3️⃣ Fall Vegetable Medley
1 sweet potato peeled and cubed
1/2 pound butternut squash peeled and cubed
10 baby potatoes (sliced in half)
1/2 pound green beans
3 carrots (peeled and halved)
8 oz baby bella mushrooms
1 red onion cut into wedges
1 head garlic (peeled)
2 tablespoons extra virgin olive oil (or avocado oil)
2 tablespoons balsamic vinegar
1.5 tablespoons Italian seasoning
fresh thyme (to taste)
2 teaspoons salt (to taste)
freshly cracked pepper (to taste)
Preheat air fryer
Keep potatoes and squash separate from veggies, toss all in the oils and spices
Start sweet potatoes, potatoes and squash, cook at 350 for 12 minutes
Add remaining veggies, cook for 10-14 more minutes at 350 or until fork tender (but still crisp, not mushy).
