Tofu is bland until it is seasoned and toasted, or added soft or toasted to a dish like a delicious curry. In this nutritious vegan Toasted Tofu and Mango Curry, the pressed and cubed tofu is toasted in a non-stick skillet while the curry is being prepared. This curry is flavored with coconut milk, Thai curry paste, turmeric, and soy, and given body with cauliflower and butternut or kombucha squash pieces. To finish it, toasted nuts, like cashews, are tossed on top. Delicious served with steamed rice!
