NEW FLAVOR! VEGAN, NO Banana, NO Coconut, Oil-Free and Nut-Free ICE CREAM!

Can you guess the base of this HEALTHY Mint Chocolate Chip vegan ice cream!? Today we are making dairy-free, egg-free, nut-free and oil-free ICE CREAM with NO bananas and NO coconut milk! This ice cream is so delicious and creamy, but is full of healthy vitamins and minerals. It can be made WFPB (whole food plant based) and makes a perfect dessert for anyone looking for a lower fat alternative to regular ice cream. Hope you guys enjoy!

Cacao Nibs (use these instead of chocolate chips for a WFPB version!)

🍦 Mint Chocolate Chip Ice Cream! 🌿
2+ cups (285g) zucchini (steamed)
1 cup (250 mL) unsweetened soy milk
1/4 – 1/3 cup (65g) sugar (or sweetener of your choice such as maple syrup)* Use 1/4 cup if you don’t want it too sweet.
1/2 (approx. 50 g) avocado
1/6 tsp. peppermint extract
Pinch of salt
1/4 cup mini chocolate chips (or well-chopped vegan dark chocolate bar)*
Add all the ingredients to a high speed blender (EXCEPT CHOCOLATE CHIPS) and blend until smooth and creamy. Refrigerate mixture for a few hours if you are using an ice cream machine. Add mixture to the base of your ice cream maker (if required, make sure your ice cream maker bowl has been in the freezer for at least 18 hours, preferably 24 hours, so that it is well-frozen) and run the machine for 20 mins., adding chocolate chips in the last 5 mins. of churning.
If you are not using an ice cream maker**, add the chocolate chips right after you finish blending, then pour into a freezer-safe tupperware and freeze.

*To make this dessert more WFPB-friendly, sub sugar with maple syrup or date paste ( and use raw cacao nibs instead of chocolate chips.
