Hi 🙋♀️….these almost zero carb wraps /tortillas are absolutely perfect …they turn out soft and pliable and are great to make wraps or have as roti or then to make quesadillas…cheers !!
1 cup golden flaxseed meal
3 tbsps psyllium husk
1 tsp xanthan gum
1 tsp salt
2 tbsps olive oil
1/2 cup Hot water
Take a mixing bowl and add the golden flaxseed meal, psyllium husk, xanthan gum and salt and give it a good mix with a spatula.
Next add the olive oil and mix again.
Now add the hot water in 2 lots and start kneading the dough so that the xanthan gum gets activated. Knead for about a minute and bring it into a ball.
Allow the dough to rest for 5-6 minutes.
This dough makes 2 huge wraps or 4 smaller wraps. Plop the dough on a parchment paper and cut into 2 equal halves.
Take one of the halves and shape into a ball and put on the parchment paper. Put another parchment paper on top of it and start rolling it out to about 1/4th inch thickness(not too thick). Don’t worry about the shape right now. After rolling it out pull off the top parchment paper and with the help of a knife cut away the extra bits to make it into a nice big circle.
Next heat a tawa or big flat pan over the stove top and brush some ghee/butter /olive oil on it.
Take the wrap along with the parchment paper and invert it onto the pan and then after a few seconds slowly pull off the parchment paper.
Allow the wrap to cook for 20-30 secs on each side. Do not over cook it or else it will become crisp.
Pull off the pan and store on your kitchen counter with sheets of parchment paper in between. You can reheat these in the microwave whenever needed for 10-20 seconds
