Keto Almond Biscotti is such a great looking and delicious snack. It is beautifully speckled with nuts and has a delicious crumb. It is very impressive when you serve it at a tea party as a keto snack. My husband asked me if it was keto. It is truly that delicious. These low carb Italian cookies or biscuits are a favourite of his and if he likes them I am really happy.
It’s a healthy snack for kids that are gluten free or keto. There are loads of nuts and you can add any nuts of your choice that are filling and satisfying snack. I plan to share more such keto snacks , biscottis and cookies. If you make this keto biscotti, it will be a staple. Stay tuned and happy cooking!!
Ingredients:
2 Cups Almond Flour
1 Cup Almonds
1 tsp Baking Powder
1 tsp Xanthan Gum
3 Tbsp Erythritol and Stevia blend (1/3 Cup Erythritol)
3 Eggs
2 Tbsp Coconut Flour
2 tsp Vanilla Essence
Mix the ingredients to form a dough.
Let the Biscotti dough rest for 10 minutes
Form a rectangular flat shape on a silicon mat and bake it for 20 minutes at 180 C or 350 F
Let it cool down for 5 -5 10 minutes and slice it into long biscotti shapes about 1.5 cm
Once cooled completely, lay them flat on the baking sheet and bake for 10 – 12 min at 160 C or 320 F
Let them cool and enjoy with a chocolate gnache or as it is.
