How To Make Apple Cake From a Pancake Mix – Super Easy Recipe

I am on a mission to make baking as simple as possible without sacrificing the taste. I’m constantly inventing and testing out recipes, and when I have a successful recipe I share it with you. This one my whole family and neighbors loved. Such a lovely light apple cake and you can add any other fruit you like.

Ingredients:
2 eggs – ROOM TEMPERATURE!
1/4 cup of sugar + 1 tablespoon
3/4 cup of your favorite pancake mix
butter or oil for greasing the pie dish
3 medium Apples, and other fruit if using

Method:
1. Bring eggs to room temperature
2. Mix eggs with 1/4 cup of sugar
3. Whip eggs with electric mixer until ribbon stage
4. Carefully fold in your pancake mix while trying not to deflate the eggs
5. Butter or oil your pie dish
6. Pour the batter into the dish and add your fruit
7. Sprinkle one tablespoon of sugar on top
8. Bake at 350F/175C for 25-27 minutes, until middle is firm and the cake is golden
