Healthy Zucchini Brownies (vegan | gluten-free)

These zucchini brownies are so fudge-y, moist, and rich. All while being vegan, gluten-free, and healthy (and filled with a nutrient-packed vegetable!). They’re so easy to make and once you make this delicious dessert you will want to make them for every occasion.

Zucchini Cacao Brownies (vegan | gluten-free)

Ingredients
1 1/4 cup zucchini
3/4 cup of coconut sugar
1 1/2 cups of rolled oats
1/2 cup raisins
1/2 cup cacao powder
1 tsp baking powder
1/4 tsp baking soda
1/3 tsp salt
1/3 cup almond butter
1/4 cup nut milk (nut milk recipe:

Instructions
1. Preheat oven to 350 degrees F and line a 6×9 load pan with parchment paper
2. Add all dry ingredients to food processor and blend
3. Then add wet ingredients and blend until smooth
4. Add raisins and add to loaf (can add more raisins on top)
5. Bake for 35-45 minutes (if toothpick comes to clean)
