I came up with these delicious hash brown tacos during my Mary’s Mini Challenge! I was so excited that the hash browns held together perfectly to use as a taco shell! I’m sharing my hash brown taco recipe along with my oil free vegan refried beans, and my potato cheese sauce recipe. I also discuss the potato and veggie filling I used during the Mary’s Mini Challenge to make it Mary’s Mini compliant if you’re doing a potato mini. Let me know if you try any of these recipes!
