This delicious & soft Gluten Free Apple Carrot Muffins is perfect for snacks or dessert.
Homemade Vegan Recipes
1 cup ( 120 g) Gluten-Free Buckwheat Flour ( or all purpose flour)
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Cinnamon powder
1/8 tsp Salt
2 tbsp Apple sauce
2 tbsp Maple syrup (adjust the amount of sweetener as to your preference)
4 tbsp Coconut oil
4 tbsp Oat milk (or any Plant-based milk )
1/2 tsp Vanilla extract
juice of half an orange
1/2 cup grated Carrots
1/2 cup grated apple
nuts /raisins/dried cranberries (optional)
Preheat oven at 350 °F (180 °C)
In a bowl whisk together all dry ingredients
In a separate bowl whisk together all wet ingredients.
Add in grated carrots & apple.
Combine wet & dry ingredients.
You may add nuts, raisins, dried cranberries or any mix-ins of your choice.
Fill in each muffin cup with the mixture.
Bake for about 20-25 minutes or until tops are golden & a toothpick inserted in the center comes out clean.
