COCONUT & OAT COOKIES – DAIRY FREE, NUT FREE SNACKS

Welcome to Jazzy’s kitchen! Today we’ll be making coconut & oat cookies that are dairy & nut free!

Ingredients:
1/2 cup plain flour
1/2 cup desiccated coconut
1/2 cup oats
1/4 cup olive nuttelex (or dairy free butter of choice)
1/4 cup sugar
1 tbsp rice malt syrup (or golden syrup, maple syrup etc)
1/4 tbsp baking powder
Pinch of salt

Method:
Preheat oven to 180c.
Combine all dry ingredients together in a bowl.
Melt nuttelex and rice malt syrup on a stovetop or in the microwave.
Pour the wet ingredients into the dry ingredients and mix until combined.
Use a soup spoon to roll the mixture into 10 even balls.
Place on to a lined baking tray, press slightly to flatten into cookie like shapes.
Cook for 15minutes or until golden brown.
