Cinnamon Date Walnut Gluten-Free Dairy-Free Cookies

In this video, I am sharing a recipe for gluten and dairy-free cookies. These cookies are delicious and easy to make. This recipe was adapted from an Auto-Immune cookbook.

Gluten-Free Cinnamon Date Walnut Cookies
Adapted by Susan Orr from a recipe from The Autoimmune Solution Cookbook
1⁄4 cup palm or other shortening
2 Tbls Joseph’s sugar-free maple syrup 1⁄4 cup coconut sugar
1 1⁄2 cup vanilla
3⁄4 cup Arrowroot Flour
1⁄4 cup Tigernut Flour
1 Tbls unflavored gelatin
1 tsp baking soda
1⁄2 tsp cream of tartar
2 tsp ground cinnamon
1⁄2 tsp sea salt
1⁄4 cup chopped dried dates
1⁄4 cup chopped walnuts
1. Line cookie sheet with parchment paper, preheat oven to 350 degrees F .
2. Beat until creamy the shortening, maple syrup, sugar, and vanilla in a large bowl.
3. In smaller bowl whisk together the dry ingredients: flours, gelatin, baking soda, salt, cinnamon, cream of tartar, and sea salt.
4. Add the dry mixture little at a time into the creamed mixture beating to mix after each addition until all combined. Dough will resemble coarse sand.
5. Stir in the dates and walnuts.
6. Using your hands, form 1 inch balls. If too crumbly, add more shortening starting with 1 Tbls. You want the dough to be pliable but hold together. Place balls about 2 inches apart.
7. Bake for 10 – 12 minutes. Remove from oven and let cool for 5 – 10 minutes. Let cool completely (if you don’t they will crumble on you)
