Calzone (AIP | Paleo | Grain Free | Gluten Free | Dairy Free | Nut Free)

If you are looking for an easy AIP Elimination Phase compliant calzone this video is for you.

One of the ways I made AIP work for me was to renovate recipes I already loved. Pre-AIP i was a coffee drinker. While I have been Caffeine free for many years I liked the taste of coffee and would often enjoy a decaf Americano, mocha or latte at a local cafe. As the weather gets colder I have been craving coffee. This is my recipe renovation for the lattes I enjoyed pre-AIP.

Cassava Tortilla Dough
1Cup Cassava Flour
1 tsp Salt
2 TBS Olive Oil
1/2-1 Cup Water

AIP Cheese: (You wont’ use all of this just freeze leftover in smaller blocks for future use.

1 Can full fat coconut milk
1 TBS Agar Agar Powder
1 TBS Apple Cider Vinegar
1/4 tsp Garlic powder (optional)
1/2 tsp Pink Salt
1/4 tsp Garlic Salt (optional)
1/2 Cup Nutritional Yeast
1/8 Cup Tapioca Starch

Nomato Sauce
Double batch of Nomato Sauce (original from RealworldAIP:
My renovated version
2 pounds carrots, peeled and cut into large chunks.
1/2 medium onion chopped
12 leaves fresh basil (I used 2 TBS dried)
2 tsp tamarind paste
1/2 cup sliced beets (I used frozen from my grocery store)
1 tsp salt
1/4 Cup ACV
1/2 Cup Water

Pressure Cook High 20 minutes
Blend with Stick Blender until smooth or marinara like.

Pizza fillings – any you like

1 lb Ground Pork
8 oz Mushrooms
1tsp Salt
1 TBS Italian Seasoning

Brown ground Pork – Add mushrooms and seasonings saute until mushrooms cooked through.
