BREAKFAST | Blueberry Bake

🛑 STOP 🛑 This pretty little thing right here is huge and yummy!

🔸4 oz Banana + 2 oz Blueberries
🔸1 Egg + 1 oz Nut Butter of Your Choice
🔸1 oz Dry Oats (quick pulse in a grinder, or leave them whole)
🔸1 Heaping Tablespoon of Cinnamon (I use Ceylon Cinnamon)
🔸Splash of Vanilla Extract
🔸Sprinkle of Baking Powder

Mix all ingredients but leave some of the blueberries out for topping. Refrigerate for 30 minutes. If you are using whole oats you may want to keep the mixture in the fridge overnight. When you’re ready to bake it, preheat the oven to 375, pour your mixture into a baking dish, top with remaining blueberries and bake for 40 minutes, or longer if you like it a bit toasty. Make it the day before, to allow all the yummy flavors to rest and settle into the bake. Heat Up & Enjoy!
If Nut Butters are a trigger for you, you can substitute the nut butter with 3 oz of Mashed Garbanzo Beans. It smells delicious when baking; so fyi on the smell!
