PUMPKIN SPICE SNICKERDOODLES
(inspired by Mxriyum on tiktok ~
on youtube ~

pre-heat oven to 350º

~ whisk together wet ingredients:
1/2 cup softened vegan butter (I used Earth Balance spread)
1/2 cup sugar
1/4 cup brown sugar
3 tbsp applesauce *
1/4 cup pumpkin puree
1 tbsp vanilla extract

~ into wet ingredients, sift dry:
1 3/4 cups flour
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp baking soda
1 tsp cream of tartar
1/4 tsp salt

cover & place in fridge for apx 10 min (or freezer for shorter if you’re me lol)
roll each cookie in pumpkin pie spice & sugar! (or just cinnamon sugar for less spice-iness)
Bake for about 9-11 min. or till golden brown
(I baked them for about 10 min the last time I made them, but use your own judgement since my apartment oven is a lil wild lol)

*if you don’t have applesauce, u should be fine using this much more pumpkin! i haven’t tried it yet but since they’re both common egg replacements it should work well – plus it would be extra pumpkin-y if that’s what u like
