Banana Nut Muffins | Gluten Free and Soy Free

Dry Ingredients:
1.5 cups GF flour
3/4 cup sugar
1 Tbsp cinnamon powder
1 tsp baking powder
½ tsp baking soda
Pinch of salt

Wet Ingredients:
1 tsp vanilla extract
2 medium mashed ripe banana
½ cup cashew or nut milk of choice
½ cup oil
1/2 cup walnuts (optional)

– In a large bowl add all dry ingredients and mix well
– In another bowl add mashed banana, all wet ingredients, and mix well
– Add wet ingredients to the bowl of dry ingredients, and mix well.
– Fill muffin cups with mixture (added approximately 1/4 cup mixture per muffin cup)
-Add chopped walnuts on top if desired
-Bake at 350 degrees for approximately 30 minutes
